I'm not sure what would cause your Mac Mini to crash, but from the details you have given us, I'm guessing it's brown outs in your area.

If brown outs are causing trouble, and they do, you need to have an UPS (Uninteruptable Power Supply).

But what about the all powerful "Start up automatically after power failure" in System Preferences?
Maybe I didn't get everything I was working on back, but it never crashed the hard drive.
