2/3 c. Sugar 1/4 c. Baking Cocoa 3 T. Cornstarch 1/4 t. Salt 2-1/4 c. Milk 2 T. Butter or Margarine 1 t. Vanilla extract
1. SIFT together sugar, cocoa, cornstarch and salt in medium bowl gradually stir in enough milk to make a paste, continue to add up to 1/2 of the milk whisking smooth. 2. Transfer to a medium heavy-bottomed saucepan and continue whisking as you add the rest of the milk 3. Cooking over medium heat, stirring constantly, until mixture JUST Starts to boil 3. Lower heat and gently boil, stirring & scraping bottom of saucepan to prevent sticking for 1 minute. (You'll feel it thickening.) 4. Remove from heat; stir in butter and vanilla.
Pour into individual dessert dishes. To avoid a skin from forming on top, press plastic wrap directly onto surface. (This comes away clean when ready to serve) Serve warm or refrigerate at least 2 hours. Garnish with whipped topping, if desired.
