If you look in your C drive do you have C:\WINDOWS\system32\DRVSTORE\usbaapl_4351B7DAFF62FD33510D77DFAE3CF8CC82517571
I would next try the above procedure but let it connect to the Internet this time.
If that doesn't work I would try uninstalling the driver, then reconnect the iPhone to see if it will reinstall it.
If it does it again I would suspect the cable if it's intermittent. It may still charge but not show up correctly if one of the wires in the cable is bad.
It could be one of the connections on the plug inside the phone too. I've seen those work intermittently. We'll hope it's not that, a cable is cheaper.
