I could be wrong, but to the best of my knowledge, you can't change the names of the predefined fields. If you want to have your own categories, use one of the Custom fields (Define menu -> Custom Fields).

How do I customize field names in NOW? For example, if i wanted to change "Company" to "Team".
Dave is correct, the existing field names can not be edited in Now Up-to-Date & Contact 5(or earlier). Only the 12 custom fields can be assigned new field names.
