After several aborted attempts, the new faster server is now in place. It turns out that all the problems were an Xserve that would randomly decide whether to boot or not from volumes ... whether Apple branded or not.
Still not sure what was wrong with that box, but a replacement one is now in place. And, the transition worked just as it should have. A simple drive swap.
