I got Halo3 today and I have to say the graphics were not all that great from the second Halo. Also the game is too easy, I beat the game with in 4 hours. The Story line is a bit weird. Humans VS The Covenant then all of a sudden they're allied to fight the bug like monsters.
In the end the Master Chief dies and the war is over. Just before the credits theres a message from Bungie stating that we all made them rich and they will continue to make and I quote "Kick ass games". I prefer single player over online so this was garbage as a single player game. As for online it's alright. Like I said the graphics don't seem so different.
I also purchased Halo 3, but I have to disagree with you for the most part. The game is a blast to play and the features are ramped up for this edition. Graphics are much better and so are the physics (allow the former are not as good as I had hoped, but then I have been playing games on the PC lately). The game does seem easier, but then my skills are so much better than they were when Halo 1 and 2 came out. I suggest playing Legendary for those with fps skills. I have to say that the story is not as creative as Bioshock, but then it does not have the killer multiplayer that Halo 3 has. Playing cooperative with three guys from my clan? Awesome. Still have great graphics and frame rates when playing in a full room, even better. I have to give it a 9 out of 10, cuz I will still be playing it online a year from now.
I rolled down to EB for the midnight thing. However, I didnt purchase Halo 3. when I got to the counter, I pre-purchased Aqua Teen Hunger Force: Zombie Ninja Pro-Am. Everyone looked at me like I was on crack. Then I got the joy of saying "Dude, I finished it in Beta." before I left. A true nerd moment. Besides, my 360 is still mailed in for repair...

The only difference in graphics is the background, Cinematic scenes and the hud has a different layout. Not really enough to make it a whole new graphics system. I played it though the medium skill level, I should try it on Legendary. I hate playing console games online, doesn't seem as fun. Also I guess im too use to playing PC games and a few real high end console games like The Darkness and BioShock.
Master Chief does not die at the end. If you didn't see the very end of the credits they left it open. With the Master Chief going into deep sleep until he's needed again. For how long it took to release I was pretty disappointed. I thought it was way to short, The mission where you save Cortana was annoying. The multiplayer is great, way better than Halo 2.
