You may be able to attach wires to the USB port internally and attach it that way if you are looking for a clean look. As for avoiding USB (or FireWire) entirely, I'm not sure how. I suppose if it were a wireless camera and you had an Airport card in the iMac you could, but those tend to be fairly expensive.

There are some cameras that run on a network. They even use the standard RJ45 connections. Just add a hub or switch and you're good to go. Thing is the ethernet cams cost around 500+.
There are much cheaper ethernet cams than that. Not too sure the quality, but they are better than you are likely to get from USB 1.1. We have a set of them running at work. You are unlikely to get them running on iChat/Photobooth or QT though if thats why you want it.
