I think a great option for a car would be to take a powerbook apart and mount the screen on the dash and the computer under the seat. it would just be hard getting a laptop video ribbon cable long enough.

Having electronics under a car seat is the worst idea. Theres safety reasons and also dirt and dust from dirty shoes/feet.
Although I love the idea but I already got a LCD in the dash. Only if my iBook didn't die, it would of been perfect. Put it in the glove box and take it out at night.
I always wanted to install a laptop in a car like that, but with the display folding down from the roof. You still have the problem of the cabling though.
