I had this iPod touch for a while, but the Devil made me buy an iPhone! Yes! I did!
Now, I do not need the iPod Touch, original version 16GB. I am going to get rid of it, but want to take all my info off [delete it] and am not sure how to do this.
Do I use I tunes? Will it be left from any identifying data from my computer and my iTunes?

If nothing else I'd be tempted to fill the iPhone with fresh nonsense data to capacity, thus overwriting all data against at least casual snooping.
You could find a big video podcast, say, Comand-D duplicate it in Finder, Select All (both copies), Command-D again... Repeat and you'll quickly get a lot of data in files with different names, ready to drop into iTunes and sync to the Touch.
