I somehow didn't think of something as simple as *adding* more chunks as the fire burns, but I think what may throw me off is that the hardwood bits look different as they burn, so I can't judge the coals as I would the briquets. I've no problems with the cooking of the food itself, it's control of the unfamiliar heat source that I need to master now. <br><br>So I'll keep at it. Practice, practice, practice...went down to the harbor earlier and got a piece of striped bass off one of the boats, now I need to figure out what I want to do to it. <br><br>
